Instructions

1. Preheat oven to 350°F (175°C). Grease and line three 8-inch (20 cm) round cake pans.
2. Prepare the cake batter: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each. Mix in vanilla.
4. Add dry ingredients in three parts, alternating with milk, beginning and ending with dry ingredients. Mix just until combined.
5. Divide batter evenly into six bowls. Tint each portion with a different color of food gel to create red, orange, yellow, green, blue, and purple batters.
6. Pour each colored batter into its own greased and lined 8-inch pan (if you have only three pans, bake in batches). Smooth tops.
7. Bake each layer for 15-18 minutes, or until a toothpick inserted in the center comes out clean. Let layers cool in pans for 10 minutes, then transfer to wire racks to cool completely.
8. Once cool, use a 3-inch (7.5 cm) round cutter to cut a hole in the center of four of the six layers (leave the top and bottom layer whole).
9. Prepare frosting: Beat butter until creamy. Gradually add powdered sugar, milk, vanilla, and salt; beat until smooth and fluffy.
10. Assemble the cake: Place the purple (bottom) whole layer on a serving plate. Spread a thin layer of frosting. Stack the first cut-out layer on top and frost lightly. Repeat with all cut-out layers.
11. Pour the assorted candies into the center cavity created by the stacked cut-out layers.
12. Place the final whole (top) cake layer over the candy-filled cavity.
13. Frost the outside and top of the cake generously with remaining frosting. Decorate with colored frosting, sprinkles, or festive decorations as desired.
14. Chill for 30 minutes before slicing for best results. Slice to reveal the candy piñata inside!

Zusatztipps für die Zubereitung

To ensure your layers bake evenly, take your time dividing and tinting the batter carefully. Using gel food coloring helps achieve vibrant hues without altering the batter’s consistency. Chilling the cake before slicing is key to clean, neat pieces, especially with the candy center. If you don’t have enough pans, bake in batches and cool layers thoroughly before assembly.

Varianten und Anpassungen

For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free flour blend. Customize the piñata filling with your favorite small candies—just avoid anything too large or sticky to maintain easy slicing. For a dairy-free adaptation, consider replacing butter and milk with plant-based alternatives that work well in baking.

Serviervorschläge

This colorful cake pairs wonderfully with a glass of cold milk or a refreshing fruity margarita to celebrate Cinco de Mayo. Present it at your party as the centerpiece dessert and watch guests delight as the candy-filled surprise is unveiled with each slice.

Recipe FAQs

How do I achieve the vibrant colors in the layers?

Use gel food coloring to tint each portion of batter before baking to ensure bright and consistent colors without altering texture.

What candies work best for the candy-filled center?

Small candies like mini M&Ms, sprinkles, or gummy bears are ideal as they fit well and don’t flatten the layers when stacked.

Can I prepare the cake layers in advance?

Yes, bake and cool the layers ahead of time; store them wrapped in the refrigerator to maintain freshness before assembly.

How can I ensure clean layers when cutting the hollow centers?

Use a round cutter slightly smaller than the cake pan and apply gentle pressure to create even holes without crumbling edges.

What is the best way to frost this multi-layered cake?

Apply a thin crumb coat first to seal crumbs, chill briefly, then finish with a smooth thick layer of vanilla buttercream.
